Roasted Tomato Mozzarella Sandwich with Pancetta and Calabrese 2013

If it were up to them, they would eat sandwiches everyday. Remove from oven and set aside.&nbsp;<b> </b><br /><br />Add about 1 tablespoon of olive oil to pan, add pancetta and fry for about 1 minute on each side, remove, drain and set aside. Add calabrese to pan and fry for about 1 minute on each side, remove, drain and set aside.
